Couscous Salad Recipe

So, this week I was preparing a meal for dinner. My plan was to make Moroccan chicken with savoury rice. After preparing my chicken I found that I did not have any more rice left. To be honest with you I was feeling kinda lazy, so I did not want to leave my house to get the rice. I wanted to improvise and create a dish with ingredients I already had. I found that I had some couscous in my pantry, so I decided to make a couscous salad using the various vegetables I had. The result was pretty good, if I do say so myself. So, I have listed down below the ingredients I used and how I did it. What I loved most about this meal is that it was super easy to do, and the ingredients were things that I already had. For me that’s what makes cooking so fun because you can just create fantastic meals from simple ingredients.


200g Couscous

2 tsp Vegetable stock (or use a cube)

250g pack cherry tomato, halved

2 Avocados peeled, stoned and chopped

150g Feta

Half a cucumber

1 Red Pepper, chopped

Chopped Spinach

For the dressing

1 tbsp pesto

2 tbsp lemon juice

3 tbsp olive oil

Pinch of salt


  1. Mix the couscous and stock in a bowl, pour over 300ml boiling water, then cover with a plate and leave for 5 mins.
  2. For the dressing, mix the pesto with the lemon juice and some seasoning, then gradually mix in the oil. Pour over the couscous and mix with a fork.
  3. Mix the tomatoes, avocado, cucumber, pepper and feta into the couscous, then lightly stir in the spinach to serve.
